Lonzino, one week old.
This is a whole muscle product made from a pork loin. It should turn out similar to Prosciutto in taste and texture....we shall see.

  1. Although this product does not need the mold growing on the outside, as you can see it just happens in my chamber due to the spores living in there. Not a bad thing as this adds protection against "bad" mold, rapid dehydration and adds to the final flavor.
